How (and why) you should Hot Pot at home

You should be eating more hotpot, and you should be doing it at home. I know hotpot is one of those cultural things that some of you might not "get". If that describes you, we want to try to make you a convert - it's a fun way to eat that takes an enormous amount of pressure off the cook. It's if you smashed together a 'one pot meal' and a 'cookout' in the best possible way.
